  • 1 cup lukewarm water
  • 1 tablespoon honey
  • 1 package active dry yeast (2 1/4 teaspoons)
  • 3 cups spelt flour
  • 1 teaspoon fine-grain sea salt
  • 2 tablespoons olive oil

    Pour the water into a large bowl, then add the honey and yeast.

    In a medium bowl, combine the flour and salt.

    When the yeast begins to foam, mix in 1 cup of the flour.

    Add the oil and mix until completely incorporated.

    Add the remaining flour 1/4 cup at a time, mixing well with your hands or a fork.

    Sprinkle a little flour out on your work surface, turn out the dough, and knead until it feels smooth.

    The dough should be soft and slightly sticky.
