  • 2 large cooking apples, peeled and sliced
  • 1 None lemon, juiced
  • 1 1/3 cups flour
  • 1/3 cup whole wheat flour
  • 1 tbsp mixed spice, such as pumpkin pie spice
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup golden raisins
  • 6 None pitted dates, chopped
  • 1 None egg, lightly beaten
  • 8 tbsp (1 stick) butter, melted

  • 2 tbsp lemon juice
  • 1/3 cup raw sugar

    Preheat the oven to 400°F. Generously grease a 12-cup muffin pan.

    Place the apples, lemon juice and 1 tbsp water in a medium saucepan. Cook on low heat until reduced to a pulp; do not sweeten.

    Combine the flours, spice, baking powder, salt, sugar, raisins and dates in a large bowl, stirring until well mixed and using your fingers to separate out the raisin and date pieces. Add the egg, butter and hot apple mixture; mix lightly until combined. Spoon into prepared muffin pan.

    Bake for 20-25 mins, until well risen and browned. Cool in pan 5 mins.

    Dip the tops into the lemon juice, then the raw sugar. Serve warm or at room temperature.
