  • 2 lb. carrots, peeled and boiled
  • 1 bell pepper, sliced
  • 1 can tomato soup (10 oz.)
  • 1/2 c. salad oil
  • 3/4 c. sugar
  • 1 Tbsp. yellow mustard
  • 1 medium onion, sliced
  • 1/2 c. vinegar

    Boil carrots (if you want them crisp, don't boil too long). Drain carrots.

    Mix all ingredients in a large container. Cover and let sit in refrigerator overnight.
