- 1 large pkg. chicken wings
- 3 Tbsp. dry sherry or Shao Hsing wine
- 1 c. water
- 2 whole star anise
- 2 small sticks cinnamon
- 2 Tbsp. tamari
- 2 Tbsp. sugar
- salt to taste
Directions

1Place wings in an ungreased wok; add wine.

2Cook until almost all of the wine has evaporated.

3Add water, cover and cook over medium-high heat for 10 minutes.

4Add the star anise and cinnamon and cook, covered, about 5 minutes.

5Then add the tamari, sugar and salt.

6Cover and simmer for 30 minutes.

7Stir often so they don't dry out.

8You may need to add some (3 to 4 tablespoons) water.

9Average cooking time is 45 minutes.
