  • 1 large eggplant
  • 2 Tbsp. olive oil
  • 1 c. onion, peeled and finely chopped
  • 1 c. green pepper, finely chopped
  • 2 cloves garlic, minced
  • 2 c. Italian plum tomatoes, finely chopped
  • 4 Tbsp. red wine vinegar
  • 1 Tbsp. fresh basil, finely chopped
  • 1/4 tsp. cayenne pepper
  • 1/8 tsp. Tabasco
  • 1 1/2 Tbsp. capers, drained
  • 1 tsp. salt

    Preheat oven to 350°.

    Cut the eggplant in half and place it on an oiled baking sheet, cut side down.

    Bake 30 to 40 minutes, or until soft.
