- 1 large eggplant
- 2 Tbsp. olive oil
- 1 c. onion, peeled and finely chopped
- 1 c. green pepper, finely chopped
- 2 cloves garlic, minced
- 2 c. Italian plum tomatoes, finely chopped
- 4 Tbsp. red wine vinegar
- 1 Tbsp. fresh basil, finely chopped
- 1/4 tsp. cayenne pepper
- 1/8 tsp. Tabasco
- 1 1/2 Tbsp. capers, drained
- 1 tsp. salt
Directions

1Preheat oven to 350°.

2Cut the eggplant in half and place it on an oiled baking sheet, cut side down.

3Bake 30 to 40 minutes, or until soft.
