  • 9 large beaten eggs
  • 1 1/2 c. granulated sugar
  • 3 c. light corn syrup
  • 1 Tbsp. vanilla extract
  • 3/4 tsp. salt
  • 1 1/2 Tbsp. ground cinnamon
  • 3/4 tsp. ground nutmeg
  • 1/2 c. melted butter or margarine
  • 3 c. chopped pecans
  • 3 Tbsp. all-purpose flour
  • 3 (9-inch) unbaked pie shells

    Combine eggs, syrup, sugar, vanilla and salt; mix well.

    Blend spices with melted butter; add to egg mixture.

    Mix well.

    Combine pecans with flour; stir into egg mixture.

    Turn into pastry shells.

    Bake in a 400° oven for 15 minutes.

    Reduce heat to 350° and continue to bake for 40 minutes or until knife comes out clean.
