Spiced Pickled Eggs

Ingredients
- 12 eggs
- 1 Tbsp. finely chopped fresh ginger
- 1 Tbsp. whole allspice
- 1 tsp. whole cloves
- 2 whole dried red peppers
- water (enough to cover eggs)
- 1 clove garlic, crushed
- 3 c. vinegar
- 1 Tbsp. sugar
- 1 tsp. salt
Directions

1In saucepan, bring eggs to a boil.

2Remove from heat and close tightly.

3Let stand 20 minutes. Drain and run cold water over eggs until chilled.

4Peel.

5Combine allspice, ginger, cloves, red peppers and garlic in cheesecloth.

6Tie loosely.

7Combine vinegar, water, salt and sugar in a saucepan.

8Put in spice bag.
-
9Bring to a boil.
-
10Turn down heat and simmer 10 minutes.

11Discard spice bag. Pour over eggs.

12Refrigerate.
-
13Ready to eat in 2 days.
