- 1 piece ginger root
- 1 Tbsp. whole cloves
- 1 Tbsp. allspice
- 8 c. sugar
- 4 c. water
- 4 c. cider vinegar
- 6 lb. ripe peaches, peeled
Directions

1Tie spices in cheesecloth.

2Add to boiling water and vinegar to the spice bag.

3Add half of peaches.

4Cook until tender 10 to 15 minutes.

5Pack peaches in hot jars, leaving 1/4 inch head space.

6Remove spice and heat syrup to boiling.

7Pour over peaches in jars.

8Seal.

9Process 15 minutes in boiling water.
