  • 1 piece ginger root
  • 1 Tbsp. whole cloves
  • 1 Tbsp. allspice
  • 8 c. sugar
  • 4 c. water
  • 4 c. cider vinegar
  • 6 lb. ripe peaches, peeled

    Tie spices in cheesecloth.

    Add to boiling water and vinegar to the spice bag.

    Add half of peaches.

    Cook until tender 10 to 15 minutes.

    Pack peaches in hot jars, leaving 1/4 inch head space.

    Remove spice and heat syrup to boiling.

    Pour over peaches in jars.

    Seal.

    Process 15 minutes in boiling water.
