  • 2 lb. fresh beets
  • 1/4 c. light brown sugar
  • 1/4 c. apple cider vinegar
  • 1 Tbsp. butter
  • 1/4 tsp. cinnamon
  • 1/4 tsp. ground ginger
  • 1 Tbsp. mustard seed
  • 1 tsp. cornstarch
  • 3 Tbsp. water

Directions

    Trim the greens from the beets.

    Bring 2 inches of water to a boil in a heavy saucepan; add the beets.

    Reduce the heat and simmer until the beets are tender, about 35 to 40 minutes.

    Do not let them become mushy.

    When tender, drain them and allow to cool. Peel and slice; set aside.
