- 2 lb. fresh beets
- 1/4 c. light brown sugar
- 1/4 c. apple cider vinegar
- 1 Tbsp. butter
- 1/4 tsp. cinnamon
- 1/4 tsp. ground ginger
- 1 Tbsp. mustard seed
- 1 tsp. cornstarch
- 3 Tbsp. water
Directions

1Trim the greens from the beets.

2Bring 2 inches of water to a boil in a heavy saucepan; add the beets.

3Reduce the heat and simmer until the beets are tender, about 35 to 40 minutes.

4Do not let them become mushy.

5When tender, drain them and allow to cool. Peel and slice; set aside.
