Spicy Black Bean Rice

  • 1 (10 oz.) can Rotel (or other brand diced tomatoes and green chiles)
  • 1 (15 oz.) can black beans
  • Minute Rice (or other instant rice)
  • Tortilla, corn chips, or tortilla chips
  • Pepperjack cheese

Directions

    Preheat oven to 350°.

    Pour Rotel and beans into casserole dish.

    Fill empty Rotel can with uncooked rice and stir into dish. Bake at 350° for about a half-hour or until rice is cooked.

    Top with slices or shreds of pepperjack cheese.

    Serve on tortillas, as dip with low-fat corn ships or alone as an entree.
