Ingredients
- 4 c. all-purpose flour
- 2 tsp. cinnamon
- 1 tsp. baking soda
- 1 3/4 tsp. baking powder
- 3 eggs, beaten
- 1 c. sugar
- 1 c. brown sugar
- 3/4 c. undiluted evaporated milk
- 1/4 c. vegetable oil
- 2/3 c. water
- 2 tsp. vanilla
- 1 3/4 c. shredded carrot
- 1/2 c. chopped nuts (optional)
Directions

1In a large bowl, combine first four dry ingredients.

2Beat eggs and mix with the next six ingredients.

3Add carrots and mix all together until moistened.

4Spoon batter into 2 greased loaf (8 1/2 x 4 1/2 x 2 1/2-inch) pans.

5Preheat oven to 325° and bake for 60 to 70 minutes.

6Insert toothpick until it comes out clean. Cool 10 minutes and remove from pans.
