  • 8 ounces chilled sharp cheddar cheese, shredded
  • 8 ounces chilled monterey jack cheese, shredded
  • 1 medium onion, quartered and shredded
  • 12 cup unsalted butter, cut into pieces (1 stick)
  • 2 teaspoons hot pepper sauce (such as Tabasco)

    Combine all ingredients in large bowl; cover and let stand until cheeses soften, about 1 hour.
