Spicy Chilli Prawns or Shrimp

Ingredients

  • 1 small red onion, finely chopped
  • 12 cup olive oil (4fl oz)
  • 1 tablespoon lime, grated rind
  • 2 -3 garlic cloves, crushed
  • 12 cup lime juice
  • 2 -3 small red chilies, seeded and finely chopped
  • 1 tablespoon ginger, grated
  • 1 stalk lemongrass, white part only, finely chopped
  • 1 teaspoon ground turmeric

Directions

    Combine all listed ingredients in a large glass or ceramic bowl.

    Add prawns and toss well, then cover & refrigerate overnight, turning the prawns once or twice while marinating.

    When ready to cook, drain the prawns, reserving the marinade.

    Heat the wok until very hot and stir-fry the prawns in three batches over high heat until they are pink and very crispy, then remove them from the wok.

    Pour the reserved marinade into the wok and bring to the boil, then return the prawns to the wok and toss well.

    Season & serve immediately.
