- 1 lb cod
- 1 (10 ounce) package frozen chopped spinach, thawed
- 1 (14 1/2 ounce) can chopped tomatoes
- 2 (10 ounce) cans chopped tomatoes and green chilies
- 1/2 onion, chopped
- 2 shallots, chopped
- 3 cloves garlic, chopped
- 3 tablespoons tomato paste
- 1 teaspoon cumin
- 1 -2 teaspoon olive oil
Directions

1Heat the olive oil in a large pan over medium high heat.

2Add the onions, shallots, and garlic.

3Cook until the onion is translucent.

4Add all the tomatoes, the tomato paste, and the cumin.

5Stir and let it simmer 3-5 minutes or until it starts to thicken slightly.

6Add the spinach and stir until it is combined.

8Meanwhile chop the cod into small even pieces.

9Add it to the tomato sauce, stirring to make sure it is all covered with sauce.

10Let it simmer 5-8 minutes or until the fish is opaque and flakes easily with a fork.
