Spicy Couscous

  • 2 tablespoons canola oil
  • 2 teaspoons minced garlic
  • 1 teaspoon crushed red pepper flakes
  • 2 cups chicken broth
  • 1 (10-ounce) box couscous
  • Salt and freshly ground black pepper

Directions

    Heat oil in a medium saucepan over medium-low heat.

    Saute garlic with red pepper flakes for 2 minutes being careful not to burn garlic.

    Add the chicken broth, turn up heat to medium-high and bring to a boil.

    Stir in couscous, cover and remove from the heat.

    Let stand 5 minutes.

    Season with salt and pepper and fluff with fork.
  7. 7
    Transfer to a serving bowl and serve.
