Spicy Egg Breakfast Wrap

  • 1 tbsp olive oil
  • 1 None onion, finely diced
  • 1 None red chilli, deseeded and chopped
  • 1 None chapatti or flour tortilla
  • 1 tsp butter
  • 1 None egg
  • 1 tbsp gouda, grated
  • None None Parsley, to garnish

Directions

    Heat oil in a saucepan. Saute onion for 3-4 mins. Add tomatoes and chili. Season. Add 1/2 cup water and simmer for 2-3 mins.

    Meanwhile, toast chapatti in a frying pan for 1-2 mins per side. Transfer to a serving plate and keep warm. Add butter to pan. Fry egg for 3-4 mins. Top chapatti with tomatoes and fried egg. Sprinkle with cheese and garnish with parsley.
