Spicy Mango Salad

Ingredients
- 2 firm mangoes, peeled and sliced into strips
- 1 sweet red pepper, seeded and cut into thin strips
- 1 sweet onion (purple, red, Vidalia, Texas 1015 or Maui), cut into thin strips
- 6 green onions, cut into thin strips
- 1 poblano chili pepper (optional)
- 1/4 c. chopped fresh cilantro
- 1/4 c. fresh lime juice
- 1 to 2 tsp. dried crushed red pepper
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
Directions

1Combine mango, red pepper and onion strips in a large bowl; set aside.

2Cut poblano chili pepper into quarters; remove seeds and membranes.

3Cut into thin strips; add to mango mixture.

4Add green onions and remaining ingredients, tossing to coat.

5Cover and chill.

6Yields 5 cups.
