- 4 Tablespoons Unsalted Butter
- 13 cups Pure Maple Syrup
- 1 Tablespoon Fresh Ginger, Sliced
- 1 teaspoon Salt
- 1 teaspoon Ground Ginger
- 1/4 teaspoons Cayenne Pepper
- 1 pound Shelled Walnuts
- Crystallized Ginger To Taste, Minced (optional)
Directions

1Preheat the oven to 300 degrees F. Combine the butter, syrup, salt, ginger, and cayenne in a small sauce pan.

2Melt the butter over low heat and simmer for 2 to 3 minutes.

3Put the walnuts in a bowl and add the melted glaze.

4Toss to coat and then spread the walnuts in a single-layer on a parchment-lined baking sheet.

5Bake the nuts for 40 to 50 minutes, stirring at 15-minute intervals.

6When the nuts are light and almost dry when you toss them, they are done.

7Remove the nuts from the oven and cool completely.

8Nuts will be very hot.

9Once cooled sprinkle with crystallized ginger and serve.
