Spicy Quesadillas

Ingredients

  • 1/2 c. chopped tomatoes
  • 1/2 c. taco sauce
  • 2/3 c. sliced green onions
  • 1 Tbsp. minced jalapenos
  • 2 c. shredded Monterey Jack cheese
  • 8 flour tortillas
  • 2 Tbsp. lemon juice

Directions

    In small bowl, combine tomatoes, taco sauce, 3 tablespoons onions, lemon juice and peppers.

    Combine cheese with remaining onions.

    For each quesadilla, sprinkle about 1/2 cup cheese mixture over it.

    Spoon 2 tablespoons sauce over cheese.

    Top with another tortilla, pressing gently.

    Fry in skillet in small amount of hot oil until golden and cheese has melted, turning once.

    Repeat with remaining ingredients.

    Heat remaining sauce and serve with quesadillas for dipping.

    Makes 8 to 10 servings.
