Spicy Red Cabbage

  • 3/4 c. strong chicken broth
  • 1 medium onion, finely chopped
  • 1 clove garlic, finely minced
  • 1 (2 lb.) head red cabbage, cut into strips (core removed)
  • 1 tart apple, peeled, cored and diced
  • 3/4 c. unsweetened apple juice
  • 2 Tbsp. apple cider vinegar
  • 2 Tbsp. lemon juice
  • 1 Tbsp. honey
  • 1 tsp. grated lemon rind
  • 1 tsp. caraway seed
  • pinch of ground cloves
  • pinch of ground allspice
  • salt to taste

Directions

    In a pot, bring the broth to a boil.

    Add the onion and garlic and cook, uncovered, over medium heat until soft, about 10 minutes. Add the remaining ingredients.

    Bring to a boil, reduce heat, cover and simmer slowly for 40 minutes.
