  • 1tbsp vegetable oil
  • 1/2c chopped onion
  • 1/2c chopped carrot
  • 1/2c diced snow peas
  • 1/2c stemmed and chopped mushrooms
  • 2 1/2c cooked sushi rice (1 c raw)
  • 2 tbsp soya sauce
  • 1tbsp mirin
  • 1tbsp sesame oil
  • 2tsp sambal oelek
  • 1/2 tsp sugar
  • Salt and pepper
  • 2c baby spinach

    Heat oil in a large pan

    Saute carrots and onions about 2 mins

    Add snow peas and mushrooms. Saute another 2 mins

    Add cooked rice.

    Pour in liquid ingredients

    Toss rice until marinade is absorbed

    Season generously with salt and pepper

    Fold in spinach. Let spinach wilt.
