Spicy Salmon Nuggets

  • 1/4 cup flour
  • 1 1/2 lb salmon fillet, cubed
  • 2 tbsp oil
  • 3 None spring onions, sliced
  • 8 oz can corn, drained
  • 8 oz jar tomato-chili sauce
  • 8 oz sour cream, to serve
  • None None tortilla chips, lettuce and parsley, to serve

Directions

    Season the flour and toss the fish cubes in it to coat them. Heat the oil and cook the fish about 8 mins, until browned all over.

    For the sauce, add the spring onion and corn to the pan and cook briefly, then stir in the tomato-chili sauce and heat through. Serve the fish bites with the sauce, a dollop of sour cream, tortilla chips and lettuce. Garnish with parsley.
