Ingredients
- 1/4 c. lime juice
- 2 cloves garlic, chopped
- 1 1/2 lb. medium-sized shrimp, cleaned and deveined
- 1 Tbsp. olive oil
- 2 medium onions, chopped
- 1 tsp. oregano
- 1/4 tsp. leaf thyme
- 1 bay leaf
- 1 (28 oz.) can plum tomatoes in puree, broken up
- 1 jalapeno pepper, seeded and cut in thin strips
- 1/2 tsp. salt
- 1/4 c. chopped fresh parsley
- hot, cooked rice
Directions

1Combine lime juice, garlic and shrimp in large bowl. Refrigerate, covered, for 1 hour, stirring occasionally.

2Heat oil in large skillet over medium heat.

3Add onion, oregano, thyme and bay leaf; saute until onion is softened.

4Add tomatoes and jalapeno pepper and salt.

5Simmer until thickened, about 20 minutes.

6Add shrimp.

7Cook, covered, about 5 minutes, until shrimp are pink and curled.

8Stir in parsley.

9Serve over rice.
