  • 1/4 c. lime juice
  • 2 cloves garlic, chopped
  • 1 1/2 lb. medium-sized shrimp, cleaned and deveined
  • 1 Tbsp. olive oil
  • 2 medium onions, chopped
  • 1 tsp. oregano
  • 1/4 tsp. leaf thyme
  • 1 bay leaf
  • 1 (28 oz.) can plum tomatoes in puree, broken up
  • 1 jalapeno pepper, seeded and cut in thin strips
  • 1/2 tsp. salt
  • 1/4 c. chopped fresh parsley
  • hot, cooked rice

Directions

    Combine lime juice, garlic and shrimp in large bowl. Refrigerate, covered, for 1 hour, stirring occasionally.

    Heat oil in large skillet over medium heat.

    Add onion, oregano, thyme and bay leaf; saute until onion is softened.

    Add tomatoes and jalapeno pepper and salt.

    Simmer until thickened, about 20 minutes.

    Add shrimp.

    Cook, covered, about 5 minutes, until shrimp are pink and curled.

    Stir in parsley.

    Serve over rice.
