  • 3 c. zucchini or yellow summer squash (unpeeled), cut into chunks
  • 2 eggs
  • 1 1/2 tsp. pumpkin pie spice
  • 1 1/3 c. nonfat dry milk
  • 1 tsp. vanilla extract
  • 1 tsp. baking powder
  • 1 Tbsp. all-purpose flour
  • 2 Tbsp. plus 2 tsp. sugar or sweetener (equivalent to 8 tsp. sugar)
