Spicy tomato quinoa

Ingredients

  • 100 grams Quinoa
  • 1 onion, chopped
  • 5 Cherry Tomatoes
  • 4 Mushrooms
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • 1/2 can Sweetcorn

Directions

    Fry the onions until brown.

    While they're frying, boil the quinoa if not ready cooked.
  3. 3
    Add the chopped up mushrooms and tomatoes and fry until softened.
  4. 4
    Once the quinoa is boiled, drain & add to the frying pan.

    Fry all together until all mixed up.

    Add the tomato paste & spices, and fry until all hot.

    And any herbs, salt, pepper to taste.
