- 1/2 large onion, chopped
- 1 1/2 Tbsp. vegetable oil
- 2 corn tortillas, chopped
- 3 cloves garlic, minced
- 1/2 Tbsp. chopped fresh cilantro
- 1 (10 3/4 oz.) can tomato puree
- 1 qt. chicken broth
- 1/2 Tbsp. ground cumin
- 1 tsp. chili powder
- 1 bay leaf
- 1/16 tsp. ground red pepper
- 2 corn tortillas
- vegetable oil
- 1 lb. skinned, boned chicken breast halves, cut into strips
- 1 avocado, peeled, seeded and cubed
- 1 c. shredded Cheddar cheese
Directions

1Position knife blade in food processor bowl; add chopped onion and process until smooth.

2Measure 1/2 cup onion puree and set aside; reserve any remaining puree for other uses.
