  • 1/2 large onion, chopped
  • 1 1/2 Tbsp. vegetable oil
  • 2 corn tortillas, chopped
  • 3 cloves garlic, minced
  • 1/2 Tbsp. chopped fresh cilantro
  • 1 (10 3/4 oz.) can tomato puree
  • 1 qt. chicken broth
  • 1/2 Tbsp. ground cumin
  • 1 tsp. chili powder
  • 1 bay leaf
  • 1/16 tsp. ground red pepper
  • 2 corn tortillas
  • vegetable oil
  • 1 lb. skinned, boned chicken breast halves, cut into strips
  • 1 avocado, peeled, seeded and cubed
  • 1 c. shredded Cheddar cheese

    Position knife blade in food processor bowl; add chopped onion and process until smooth.

    Measure 1/2 cup onion puree and set aside; reserve any remaining puree for other uses.
