  • 1 lb pecan halves
  • 6 cups water
  • 12 cup sugar
  • 3 tablespoons butter, melted
  • 1 tablespoon corn syrup
  • 1 tablespoon vanilla extract
  • 14 teaspoon salt
  • 14 teaspoon cinnamon
  • 14 teaspoon nutmeg
  • 14 teaspoon allspice
  • 18 teaspoon pepper

    In a large bowl combine, sugar, butter, corn syrup and vanilla; mix well.

    Set sugar mixture aside.

    Boil pecans in water for one minute; drain.

    Immediately toss pecans in large bowl with sugar mixture.

    Cover bowl and let sit 12 to 24 hours.

    Place pecans on an ungreased jelly-roll pan.

    Bake at 325F for 30 minutes, stirring every 5 minutes.

    While pecans are baking, combine remaining spice ingredients in a large bowl.

    After baking pecans, immediately toss the with the spices until well coated.
