Spicy White Bean Dip

Ingredients

  • 1 (16 oz.) can white beans
  • 1/3 c. minced onion
  • 2 cloves garlic, pressed
  • 1 roasted red pepper, peeled, seeded and diced
  • 1 large minced jalapeno pepper, seeds removed
  • 1/3 c. finely chopped cilantro
  • 2 Tbsp. olive oil
  • salt

Directions

    Drain the beans but save 1/2 of the liquid.

    Puree the beans in a food processor, adding some of the liquid as needed.

    Saute the onion and garlic in the oil until golden.

    Add in the jalapeno and red pepper. Cook briefly, then add the bean puree and remove from heat.

    Stir in the cilantro and add salt to taste.

    Use the bean liquid to reach desired consistency.
