Spicy White Bean Dip

- 1 (16 oz.) can white beans
- 1/3 c. minced onion
- 2 cloves garlic, pressed
- 1 roasted red pepper, peeled, seeded and diced
- 1 large minced jalapeno pepper, seeds removed
- 1/3 c. finely chopped cilantro
- 2 Tbsp. olive oil
- salt
Directions

1Drain the beans but save 1/2 of the liquid.

2Puree the beans in a food processor, adding some of the liquid as needed.

3Saute the onion and garlic in the oil until golden.

4Add in the jalapeno and red pepper. Cook briefly, then add the bean puree and remove from heat.

5Stir in the cilantro and add salt to taste.

6Use the bean liquid to reach desired consistency.
