Spinach And Eggs Frittata

- 2 pkg. fresh spinach (frozen chopped spinach or other vegetables can be substituted in this mixture)
- 1/4 c. olive oil
- 1 tsp. chopped garlic (more if you like)
- 6 to 8 eggs
- 4 to 6 oz. grated Parmesan cheese
Directions

1Wash fresh spinach in cold water.

2Steam or boil spinach until soft; drain and let cool slightly.

3Chop spinach coarsely.

4Set frying pan on stove with oil and garlic.

5Turn heat on to medium setting.

6Mix eggs and cooked spinach together.

7Add cheese to taste (cheese helps to bind mixture and gives it a great flavor). Pour in spinach mixture.

8Fry until set.

9Slice frittata in triangles.

10Turn and brown.

11Serve with fresh salad and bread. Serves 4.
