- 1 bag of fresh spinach
- 2 garlic cloves, sliced
- 1 1/2 tbsp olive oil, extra virgin
- 3/4 tbsp vinegar
Directions

1Heat the olive oil in a frying pan over medium heat.

2Blanch the spinach in boiling for about a minute.

3And then drain.

4Add the garlic and fry for 2-3 minutes until golden and softened.

5Add the spinach, stir every so often.

6Cook for 3-5 minutes.

7Once the spinach has fully wilted add the vinegar and salt.

8Cook for a further 1-2 minutes and remove from heat.

9Check seasoning.

10And serve.
