  • 1 bag of fresh spinach
  • 2 garlic cloves, sliced
  • 1 1/2 tbsp olive oil, extra virgin
  • 3/4 tbsp vinegar

Directions

    Heat the olive oil in a frying pan over medium heat.

    Blanch the spinach in boiling for about a minute.

    And then drain.

    Add the garlic and fry for 2-3 minutes until golden and softened.

    Add the spinach, stir every so often.

    Cook for 3-5 minutes.

    Once the spinach has fully wilted add the vinegar and salt.

    Cook for a further 1-2 minutes and remove from heat.

    Check seasoning.

    And serve.
