  • 1 1/4 cup corn kernels
  • 1 1/4 cup green beans
  • 3/4 cup spinach
  • 1/4 tsp dried thyme leaves
  • 1/2 tsp coarse salt and ground pepper
  • 2 tsp white-wine vinegar (or any kind)

    In a large skillet, heat oil over medium-high.

    Add corn and green beans, and cook until green beans are warmed through, 4 to 6 minutes.

    Add spinach and thyme; season with salt and pepper.
