Ingredients

  • 1 pkg. fresh spinach
  • 1 c. rice
  • 2 to 3 Tbsp. olive oil
  • 1 small onion, chopped
  • 1 small can tomato sauce
  • dash of dill
  • salt and pepper to taste
  • 4 to 5 cans water

Directions

    Wash spinach; trim stems and discard.

    Chop spinach into small pieces.

    Saute onion in olive oil until transparent.
  4. 4
    Add spinach to olive oil and onion; cook until spinach softens.

    Add tomato sauce, dill, salt, pepper and rice.

    Add the water.

    After it boils, lower heat to simmer.

    Check to see that water is not absorbed too quickly.

    If so, add another can until rice cooks.
