  • 1 lb. fresh spinach, stemmed *
  • 4 large green onions, chopped (1/2 c.)
  • 1 clove garlic, minced (1 tsp.)
  • 2 Tbsp. butter or margarine
  • 6 oz. Swiss cheese, shredded (1 1/2 c.)
  • 3 large eggs, lightly beaten, or 3/4 c. egg substitute
  • 3/4 c. skim or low-fat milk
  • 1/2 tsp. salt
  • 1 tsp. leaf basil, crumbled
  • 1/2 tsp. celery salt
  • 3 medium fresh plum or Roma tomatoes, thinly sliced crosswise
  • 1 Tbsp. dry bread crumbs
  • 1 Tbsp. grated Parmesan cheese
