Name: Spinach and Two Cheese Bake
Ingredients: 3 -10 oz packages of frozen spinach completely defrosted and drained very well; 1 1/2 cup half and half; 3 eggs; 1 cup shredded swiss PLUS an additional 1/4 cup for topping; 1/2 cup shredded parmesan(or a good quality grated) PLUS an additional 1/8-1/4 cup for topping.; 1 tsp salt; 1/2 tsp pepper; 1/2 tsp ground nutmeg

1/2 cup shredded parmesan(or a good quality grated) PLUS an additional 1/8-1/4 cup for topping.
1 tsp salt
1/2 tsp pepper
1/2 tsp ground nutmeg

Preheat oven to 350.

Beat eggs well and add in the half and half.

Add the spinach and remaining ingredients and mix well.

Spoon the spinach and cheese mixture in a WELL greased or sprayed baking dish.

Top evenly with 1/4 cup of swiss and Parmesan.

Bake for 45-55 minutes or until center is set and its a nice golden brown.
