- 1 cup all-purpose flour
- 1 cup cornmeal
- 1/4 cup white sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup shredded Cheddar cheese
- 1/2 cup fresh spinach
- 1/2 (14 ounce) can artichoke hearts, broken up with your fingers
- 1/3 cup milk
- 1 egg, lightly beaten

1Preheat oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners.

2Combine flour, cornmeal, sugar, baking powder, baking soda, and salt in a large bowl.

3Mix Cheddar cheese, spinach, artichoke hearts, milk, and egg together in a separate bowl. Stir into the flour mixture just until moistened. Pour into the prepared muffin tin.

4Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Cool briefly on a wire rack.
