  • 2 hard-cooked eggs, chopped
  • 1 small onion, thinly sliced and separated in rings
  • 1/2 medium avocado, cut in 1/2-inch pieces
  • 1 hard-cooked egg, sliced
  • 2 to 3 Tbsp. lemon juice
  • 1/4 c. vegetable oil
  • 1/2 tsp. salt
  • dash of pepper
