- 1 small onion, thinly sliced and separated in rings
- 1/2 medium avocado, cut in 1/2-inch pieces
- 1 hard-cooked egg, sliced
- 2 to 3 Tbsp. lemon juice
- 1/4 c. vegetable oil
- 1/2 tsp. salt
- dash of pepper
