Spinach Bake

  • 1 (10 oz.) pkg. frozen chopped spinach
  • 1 (16 oz.) carton sour cream
  • 1 regular pkg. Lipton onion soup mix
  • 2 eggs
  • 2 small zucchini, thinly sliced
  • 1 tomato, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 6 slices American cheese
  • 1 Tbsp. butter or margarine

Directions

    Preheat toaster oven at 350° for 2 minutes.

    Layer one half zucchini into bottom of small casserole.

    Cover with one half tomato slices, one half pepper slices and 3 slices cheese.

    Repeat layers.

    Dot surface with butter.

    Cover with aluminum foil.

    Bake at 350° for 35 to 45 minutes, or until zucchini is tender.
