  • 2 (10 oz.) pkg. spinach, chopped, cooked and drained
  • 2 c. croutons
  • 1 large onion, chopped
  • 1 stick butter, melted
  • 4 oz. cream cheese
  • 1/2 c. chopped nuts (walnuts, pecans, sunflower seeds)
  • 1 tsp. parsley, fennel and thyme parsley patch
  • 1/2 c. celery
  • 6 eggs, well beaten
  • 1/2 c. Cheddar cheese, grated

Directions

    Mix all together. Roll into 3/4-inch balls. Bake on oiled cookie sheets at 325° for 15 to 20 minutes.
