  • 2 pkg. spinach, chopped, cooked and drained
  • 2 c. Pepperidge Farm stuffing mix
  • 1 c. grated Parmesan cheese
  • 6 eggs, beaten
  • 3/4 c. butter, softened
  • chopped onion and chive
  • salt and pepper to taste

Directions

    Lightly saute onion in oil; set aside to cool.

    Combine other ingredients, then add sauteed onion (drained).

    Chill and roll into balls.

    Freeze now, or bake at 350° for 15 minutes.

    Put butter on hands when rolling balls.

    They are done when they stay together and bottoms are light brown.
