Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 2 c. One-Step Chicken Flavor Stove Top stuffing mix
  • 1 c. parmesan cheese, grated
  • 6 large eggs, lightly beaten
  • 1 1/2 sticks butter, room temperature
  • 1/2 tsp. salt
  • freshly ground pepper to taste

    Cook and drain the spinach well.

    Mix all the remaining ingredients until blended.

    Roll into walnut size balls and arrange close but not touching on cookie sheet.

    Freeze until hard.

    Store in freezer storage bag for up to one month.

    To Serve:

    Heat oven to 350°; bake 15 to 20 minutes until hot and firm enough to pick up.
