Ingredients

  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
  • 1 c. cornbread stuffing mix (seasoned)
  • 1/2 c. finely grated Swiss cheese
  • 1 small onion, finely chopped
  • 2 eggs
  • 6 Tbsp. butter (try using 4 Tbsp.)
  • 1/4 tsp. nutmeg
  • poultry seasoning
  • sage

Directions

    Saute onion in butter.

    Add remaining ingredients.

    Blend and shape into 1-inch balls.

    Place on cookie sheet and freeze.

    When completely frozen, place in plastic bag until ready to bake.

    Bake on ungreased cookie sheet at 350° for 15 minutes.

    Makes approximately 3 dozen.
