Ingredients

  • 2 boxes frozen spinach, cooked, chopped and drained
  • 2 c. Pepperidge Farm herb seasoned stuffing mix
  • 6 eggs, beaten
  • 2 large onions, chopped fine
  • 3/4 c. melted margarine
  • 1/2 to 3/4 c. Parmesan cheese
  • 3/4 Tbsp. garlic powder
  • 1 tsp. thyme
  • 1 tsp. black pepper
  • 1/2 c. chopped parsley (optional)

Directions

    Mix well and form into small balls.

    Place on cookie sheet. Bake in a preheated 375° oven for 10 minutes.

    Makes 70 balls. Freezes well.
