  • 2 pkg. chopped, frozen spinach
  • 1 cup Parmesan cheese
  • 6 oz. onion/garlic croutons
  • 6 eggs
  • 3/4 cup butter or margarine
  • 1 medium onion, finely chopped
  • 1 clove garlic, minced

Directions

    Crush croutons. Cook spinach and drain thoroughly. Saut onion and garlic in butter. Mix all ingredients. Chill. Shape into meatball size balls. Bake at 350° for 15 minutes.
