Spinach Balls

  • 2 boxes (10 Oz. Size) Chopped Frozen Spinach, Defrosted And Squeezed Of Excess Water
  • 5 Eggs, Beaten
  • 1 Onion, finely chopped
  • 1 stick Butter, Melted
  • 1 cup Parmesan Cheese, Grated (I Used Pre-grated Cheese In A Can With Excellent Results)
  • 1 box (about 5 Or 6 Oz. Size) Croutons, Any Flavor

    Note: make sure you squeeze as much excess water from the spinach out as you can.

    It makes a difference in the end!

    Put spinach in a bowl and break squeezed bits apart.

    Add beaten eggs, onion, butter, cheese, then croutons.

    Mix well.

    Chill mixture for about 30 minutes.

    Preheat oven to 350 degrees F.

    Form mixture into walnut-sized balls using your hands or a spoon (I prefer using my hands).

    Place balls on a cookie sheet and bake for about 15 minutes, until lightly browned.

    Allow to cool slightly before removing to a plate for serving.

    Recipe can be doubled, tripled, quadrupled.

    Store in the refrigerator if there are any left.
