Spinach Balls

- 2 boxes (10 Oz. Size) Chopped Frozen Spinach, Defrosted And Squeezed Of Excess Water
- 5 Eggs, Beaten
- 1 Onion, finely chopped
- 1 stick Butter, Melted
- 1 cup Parmesan Cheese, Grated (I Used Pre-grated Cheese In A Can With Excellent Results)
- 1 box (about 5 Or 6 Oz. Size) Croutons, Any Flavor

1Note: make sure you squeeze as much excess water from the spinach out as you can.

2It makes a difference in the end!

3Put spinach in a bowl and break squeezed bits apart.

4Add beaten eggs, onion, butter, cheese, then croutons.

5Mix well.

6Chill mixture for about 30 minutes.

7Preheat oven to 350 degrees F.

8Form mixture into walnut-sized balls using your hands or a spoon (I prefer using my hands).

9Place balls on a cookie sheet and bake for about 15 minutes, until lightly browned.

10Allow to cool slightly before removing to a plate for serving.

11Recipe can be doubled, tripled, quadrupled.

12Store in the refrigerator if there are any left.
