Spinach Balls

  • 2 c. cooked spinach or No. 202 can
  • 1 c. bread crumbs (biscuits)
  • 2 Tbsp. vinegar
  • 3 Tbsp. grated onion
  • salt and pepper to taste
  • 4 strips bacon
  • 2 boiled eggs

Directions

    Cook bacon crisp and take out and put on paper towel to drain.

    Put the bread crumbs in bacon grease with onions and brown lightly.
  3. 3
    Then put spinach and vinegar in and cook until dry. Form into balls.

    Crumble bacon over them.
  5. 5
    Slice eggs and put on balls.
