Ingredients

  • 4 Tbsp. butter
  • 3 eggs
  • 1 c. flour
  • 1 c. milk
  • 1 tsp. baking powder
  • 10 oz. pkg. frozen chopped spinach, thawed, drained, squeezed dry
  • 1 small onion
  • 6 slices of crisp bacon
  • 1 lb. shredded Cheddar cheese
  • 1/2 c. chopped mushrooms
  • 1 c. crushed, canned fried onion rings

Directions

    Melt butter in a 9 x 13 pan. Mix together eggs, flour, milk and baking powder until smooth. Stir in spinach, onion, finely chopped crumbled bacon, cheese and mushrooms.

    Pour into pan. Sprinkle with crushed onion rings. Bake at 350° for 30-35 minutes until golden brown.

    Cool slightly. Cut in small squares or large squares for dinner vegetables.
