Spinach Bhaji

  • 1 pound frozen spinach
  • onions bag frozen chopped
  • 2 teaspoons turmeric
  • 1 teaspoon curry powder
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin seed
  • 1 tablespoon ginger root chopped, or 1 1/2 tsp. ginger powder
  • 2 cans tomatoes drained

Directions

    Fry onions in 5 ounces butter until almost browned. Add spices and fry 5 minutes. Add tomatoes and mash or chop until liquid evaporates.

    Add spinach. Do not add water. Cook until spinach is tender and extra liquid has cooked off. (Add a can of drained potatoes if desired.)
