Spinach Bisque

- 1/2 c. chopped onion
- 2 Tbsp. margarine
- 1/3 c. all purpose flour
- 1/2 to 1 tsp. salt
- 1/8 tsp. nutmeg
- 2 1/2 c. milk
- 1 c. water
- 3/4 c. cubed American cheese
- 1 pkg. (10 oz.) frozen chopped spinach, thawed and drained
- oyster crackers, optional
Directions

1In 3 quart saucepan, saute onion in butter until tender. Stir in flour, salt and nutmeg until smooth.

2Gradually whisk in milk and water.

3Add cheese; cook and stir over medium heat until melted.

4Add spinach; cover and simmer for 4 to 5 minutes or until heated through.

5Serve with oyster crackers if desired.

6Yield: 5 to 6 servings.
