- 1 teaspoon Olive Oil
- 1 whole White Onion, Chopped
- 1 whole Shallot, Chopped
- 3 cloves Garlic, Smashed And Minced
- 1 bag (16 Ounce Bag) Frozen Chopped Spinach
- 2 cups Vegetable Stock (or Water)
- 1 cup Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Powder
- 2 whole Eggs
- 1 cup Milk
- 1/2 sticks Melted Butter
- 8 ounces, weight Mozzarella, Shredded
- 1/2 cups Parmesan Cheese, Grated
- 4 ounces, weight Feta Cheese, Crumbled
Directions

1Preheat oven to 375 degrees F .

2Lightly grease a 9x13 inch baking dish.

3Heat olive oil in medium saucepan over medium heat and saute onion, shallot and garlic until onion and shallot are clear.

4In same sauce pan add spinach with vegetable stock or water (use just enough to cover the mixture).

5Bring to a boil.

6Lower heat to simmer and cook until spinach is limp, about 3 minutes.

7Remove from heat and set aside.

8In a large bowl, mix flour, salt and baking powder.

9Stir in eggs, milk and butter.

10Mix in the spinach mixture and the mozzarella, parmesan, and feta cheese

11Transfer the mixture to the prepared baking dish.

12Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.

13Cool before serving.

14Serve as an appetizer or side dish.
