Spinach Burger

- 1 1/2 cups spinach, chopped
- 1/4 cup onion, finely chopped
- 1 minced garlic clove
- 200 g white kidney beans
- 1/4 cup cooked rice
- salt
- pepper
- 1 1/2 tablespoons olive oil
- 4 hamburger buns
- tomatoes, slices
- onion, slices
Directions

1Heat 1/2 T of oil in a large pan over medium flame.

2Saute the onions for a minute.

3Add the garlic and stir-fry for 30 seconds.

4Add the spinach and cook for 2 to 3 minutes.

5Transfer to a mixer and add the beans.

6Blend together until well combined.

7Transfer to a bowl along with the rice.

8Add salt and pepper.

9Divide the mixture and make medium sized balls. Flatten them into medium patties.

10Cook the patties on both sides until browned evenly (Stovetop).

11To serve, toast the burger buns.
